Description:A well-rounded and balanced Old Ale, created in collaboration with Henry at Sunken Knave. Brewed using Chevalier heritage barley and aged in wood with a mixed culture of yeast and bacteria, the aroma consists of light caramel and honey with rich, funky red berry notes. Slightly tart with red wine characteristics, there are hints of balsamic and sour cherries; it’s remarkably light and easy drinking despite the complexity. In the glass it’s an appetising shade of copper red with an off white head; all in all an elegant beer that will continue to evolve in the bottle.
