Pazo de Mirasoles - Albariño
Appearance: Pale lemon with delicate silver reflections, conveying a clean and inviting look typical of expressive Albariño wines.
Aroma: Bright and aromatic, with lively citrus zest, white peach, and a whisper of lemon meringue, touched by floral and herbal nuances that add depth.
Palate: Crisp and dry, this medium-bodied Albariño elegantly balances vibrant acidity with flavours of green apple, pear, melon, and lemon—finishing with a subtle saline minerality and floral lift.
Winemaking: Organic and biodynamically farmed, this wine is grown at high altitudes in La Mancha (above 800–900 m), helping preserve freshness and aromatic purity. Ambient yeast fermentation and aging in inert stainless steel help maintain its fresh, delicate character.
Producer: Crafted by Bodegas Parra Jiménez, a family-run estate in central Spain that has practiced organic viticulture since 1995, embraced biodynamic methods since 2008, and follows a low-intervention philosophy that respects both terroir and sustainability.
Food Pairing: Exceptionally versatile, it complements grilled seafood (like prawns or mussels), soft cheeses (especially Manchego), sushi, salads, light Mediterranean fare, or simply serve as a bright, refreshing aperitif.
Serving: Best enjoyed well-chilled at 8–10 °C, which brings out its crisp fruit character, zesty freshness, and minerally finish.
