Pet nat is an ancient system of making a naturally sparkling wine in the bottle. The wine is bottled during the waxing moon, with the addition of dried grape juice or natural residual sugar from the first fermentation, which triggers the second fermentation in the bottle. The result is a more persistent and long-lasting natural effervescence; since it is unfiltered, it retains its bubbles longer.
It has been aged in the bottle for two years.
It is a natural and elegant wine, suitable for light meals but also for drinking on its own. Spontaneous fermentation.
